Droughts and Desserts

This is my last summer in Texas and to celebrate my moving to Washington DC, Texas has blessed us with the worst drought in over 100 years AND for the past 70 days we’ve had temperatures over 100 degrees, which is a new record (breaking the record previously made in the 1920s). Go Texas. You know, when I first moved to Austin, I couldn’t figure out how people did this every summer, but I quickly learned that the general consensus on how to stay cool is “don’t go outside.” So that’s what we do. We also use the heat as an excuse to visit snow cone trailers, eat ice cream cones, and not wear pants around the house, but what I really want to talk about is dessert.

At Isabelle and Andrew’s wedding, they had the most amazing frozen desserts by The Mom & Pops. Really amazing. Pineapple-and-rosemary blend amazing. About a week ago, I stumbled upon this recipe for watermelon-mint ice pops. I liked them enough to think about making them and talk about how good they probably are on Facebook, but apparently not enough actually buy the ingredients. First of all, watermelons are heavy. And I’m only 5 feet tall. And secondly, I wouldn’t even know where to begin to look for popcicle molds. All hope seemed lost. I’d nearly given up on my homemade dessert dreams until today. I was finishing putting together a wedding slideshow when I remembered Isabelle and Andrew’s amazing wedding treats and I had to have some.

So now it’s Sunday, 110 degrees, sunny, a little humid, and I’m about to head out to grab some treats, but first, I wanted to share the photos that inspired me to finally go out and make some pineapple-and-rosemary level frozen desserts. Or (much more likely) buy them from Whole Foods. After all, who wants to make food when it’s this hot out?

Brussels Sprouts with Buttered Pecans: Austin Food Photography

As a lover of junk food, it’s painful to admit (and hard for some to hear), but I love brussels sprouts. There. I said it. I love them. It’s a dirty secret of mine that I’ve always had; I’ve never winced at spinach or sneered at  steamed vegetables. I love my greens, although I still refuse to believe a salad is a meal. Growing up with gardening parents in West Virginia, our cabinet tops were always overflowing with fresh tomatoes, cucumbers, an assortment of peppers, and all sorts of grapes and I was lucky to get to reap the benefits of it all.

Needless to say, when I found this recipe, I was excited. Sugar-loving, vegetable-hating Josh wasn’t. However, he LOVED this take on an otherwise dreary meal. If you have someone that might not be thrilled about their greens, this may change their mind.

If you decide to make them, however, I should let you know that pecans burn easy in gas stoves. Or maybe in general. Or maybe we’re just bad cooks (this is incredibly likely). Either way, we definitely burned the first batch. The second batch came out amazing and this was the result:

Recipe can be found here, although we opted for large, uncut brussels sprouts. By “opted” I mean, of course, we didn’t read the substitution directions that instructed us to quarter the larger sprouts until they were already in the pot. No big deal. They were amazing.

Homemade Vegan Blackberry Hand Pies: Food photography Austin TX

I adore food. Love it. If you know me, then you know I talk about it a lot. I spend countless hours looking at food. I buy cookbooks full of photos of dishes I wish I could just smell and I read recipes I absolutely could never cook. Though, thankfully, I live with one of the best recipe-instruction-followers I’ve ever met.

It didn’t take long to realize all of this love and dedication to food needed to be combined with my other love and that’s why we’re all here today. So I can show you photos of the food I’m going to consume. More soon to come. =)

Recipe here, though we (by “we,” I mean “Josh – the preparer of these awesome pastries!) substituted the pastry dough for store bought phyllo dough.
